(Lemongrass, Ginger and Champagne Granita)
Our fabulous friend Michelle (From The Vintage Baker) created this wonderful granita recipe using She-Tea’s Abundance blend of lemongrass & ginger…sublime!
1 litre hot water
2 pyramid teabags “Abundance” (She-Tea’s Organic Lemongrass & Ginger tea)
7 teaspoons of sugar
1 glass champagne
Place teabags in a large jug
Fill with hot water from the kettle
Place sugar in jug and stir till dissolved
Allow to steep and cool, then add bubbly and place the mix in a shallow roasting dish or container
Place in freezer and use a fork to rough up the ice every couple of hours. (If you do this in the evening and go to bed without regular roughing up, no problem you will just have do give it a good stabbing the following day, then rough it up just before you need it.)
When you are ready to serve, rough up ice, place in a champagne flute or build a mountain of it in a champagne saucer then top with bubbly.
